To ensure superior production of high quality pastry and bakery items, example pastries, cakes, tarts, ice cream, sorbet, fruit compotes, breads, chocolate and sugar work etc. for all outlets as well as banquets and amenities.
To manage production resources at optimum level.
To prepare exciting and appealing petit fours and mignardises & other items as needed for special guest, events and VIP’s.
To monitor and review operating criteria and develop an awareness of the importance of food preparation and quality in accordance with the Hotel's Standard, freshness and hygiene.
To ensure the correct preparation and presentation of a consistent level for all pastry items prepared.
To ensure that sanitation standards as set forth by the Hotel and the MOE are in compliance as well the cleanliness and neatness of the kitchen. The ability to supervise the maintenance and cleanliness of all food preparation equipment.
To ensure all equipment is in full working order, safe to operate and well maintained. To develop and ensure a safe working culture and environment for people to work.
To establish standard recipes and ensure the compliance with them including recipe cost calculation.
To be able to coordinate the job requirements between all the kitchens, the Chefs, in cooperation with Stewarding, Service and Engineering departments.
To be able to coordinate the job requirements with guests, sells persons and PR in order to address any special requests and pastry product exposure.
To treat employees at every level of responsibilities fairly and consistently to achieve high morale and minimum turnover.
To ensure staffs are well trained on standard recipes and fully responsible for development of Pastry team
Reading, writing and oral proficiency in the English language.
High school and culinary school training.
Minimum 8 years of pastry experience, preferably with 5 star International Hotels.
Possess knowledge of sanitation requirements in handling food production; HACCP certificate a plus.
Creative in pastry creation.
